You can dump all the loose grease out so the pan just has a light coating. Trust me. It will make them 10x better.

My bday lunch earlier from San Pedro Fish Market...garlic bread, 1/2lb scallops, 1/2 bbq fish filet, 1lb shrimp, and 3lbs of snow crab with bell peppers, onions, and potatoes. Of course I washed it down with a beer.
