this is the first thing i learned to make from scratch as a lil tween i would do it for friends sleeping over next morning.

that lil pinch of nutmeg made it pop. never had any on hand so my calculations of just adding a pinch was correct. nutmeg got a strong taste but i got it just right.

a teaspoon of salt, a teaspoon of baking powder and a couple table spoons of sugar and of course flour as much as you need to make as much as you want.

first mix the dry ingredients and then mix in the wet: milk, 2 or 3 eggs, cooking oil (using canola) and mix enough of the milk in to see the batter drip in a consistent line instead of drops.

lightly oil your pan, keep the pan evenly oiled with a paper towel. at medium to high heat and bring it down when it's been heated up too much back down to a medium flame.

don't know what got into me wanting to cook so late and wanting to do pancakes from scratch again??? i haven't done it in years so i guess i wanted to see if i can still do it.
