i wouldnt consider it extortion, but more of a respect thing. waiters/waitresses/servers only make minimum wage. so their main means to make money is tips. So yes if i do receive moderate to great service i will tip. These people are bringing us food and drinks and some more shit.
I do customer service, i work in a call center. and i get paid great. but i rather be in a call center than be a server. thats hard work right there imo.

it isn't mandatory, but it's pretty much a given that if you go out to eat at a restaurant where you sit down are waited on, that you leave a tip. there's certain rules to society that most normal people follow. if you can't afford to tip, don't go out to eat, period.
