It's easy. Brown the rice with oil while it's still dry, throw some chicken broth in instead of water and tomato paste and some garlic powder, then simmer it for like 20-30 minutes. I just eye ball everything no measurements. It might take you a couple tries but that's the recipe to success right there

Mocajetes from Mendozas Taqueria in SJ . Ones filled with carne asada, chicken, chorizo, fried cheese, nopales, a grilled onion and a grilled jalapeno. The other one is the same but shrimp instead of chorizo. All topped with salsa verde.
