went to Eugene for a few days..went to valley river mall and these had this mexican spot in the mall and had that mexican corn on the cob and it was soooooo good. the tacos were alright but the mexican corn on the cob was the best

first pic is from breakfast in Eugene at Studio One Cafe. i got crab eggs Benedict and it was very good but the service was shit. took them forever to get our drinks.

2nd place i only got pics of the appetizers because they turned the lights really low once it got darker outside. but it was at Cafe Lucky Noodle downtown Eugene on 5th street. the rolls were good but not great..the crab cakes were very good but they cost $15 for 2 of them and a small salad on the side. fuck that shit. than for the main dish i got spaghetti and meatballs..it was ok but not better than mine.

Tater tot casserole!

Fried spam, havarti, and egg sandwich on a hawaiian roll. Fucking delicious.

TATER TOTS CASSEROLE
1 lb. ground beef
1/2 cup chopped onion
4 cups frozen tater tots
1 can Cream of Celery soup
1/4 tsp. garlic powder
Brown ground beef and onion; drain. If beef is very lean, add 1 tsp. olive oil for best browning results.
Transfer meat mixture into a shallow 2 quart baking dish. Cover meat with undiluted soup. Top with a single layer of tater tots.

Bake at 375°F for 45 minutes.

Pretty good and makes good leftovers too!
