HAHAHA! Yea, sounds like you may have gone to the wrong spots.

The way pizza is made depends on which region you're in. Neapolitan is traditional, and there are three types. Pizza marinara is oregano, tomato, garlic and extra virgin olive oil. Pizza Margherita is sliced mozzarella, tomato, basil and extra virgin olive oil. Pizza Margherita extra has tomato, buffalo mozzarella from Campania in fillets, basil and extra virgin olive oil.

Then you have the following...

Pizza romana (in Naples) has tomato, mozzarella, anchovies, oregano, oil
Pizza viennese has tomato, mozzarella, German sausage, oregano, oil
Pizza capricciosa has mozzarella, tomato, mushrooms, artichokes, cooked ham, olives, oil (in Rome, prosciutto raw ham is used and half a hard-boiled egg is added)
Pizza quattro stagioni has the same ingredients as the capricciosa, but they are not mixed
Pizza quattro formaggi (“four cheese pizza”): tomatoes, mozzarella, stracchino, fontina, gorgonzola

Then you have Sicilian pizza...which has the toppings baked into the crust itself...typically oregano, basil and garlic. The actual top of the pizza is optional.

Though I LOVE authentic pizza, I'd have to say my favorite stuff is a real Calzone...nothing is better to me.
I was in Milan, Florence, and Rome...and I know all the pizzas you listed, just not from Italy but from Pizza places in other countries. And it's not like I'm used to American Pizza, cause I'm from Europe...

Oh well then you're good. Pizza out here is a fuckin' joke. Pizza shouldn't be eaten with taco bell hot sauce, but for some reason that is the only way I can stuff down a few slices from Little Caesars. Pizza Hut has SOME good stuff, but nothing compared to authentic Italian, or even Chicago or NY Pizza....

Yea, sucks for us in the U.S. that live on the opposite side of the country. Chicago and NY are the places to go for pizza from what I understand. In fact, I think I'm gonna look for a Chicago style parlor in Cali...there has to be one somewhere. There was this place in San Jose called Tony Soprano's (originated in NY....before the t.v. show). The owner wanted to expand, so they opened up shop out here, and it was OFF THE HOOK! I don't think they are still out here though, which blows.

I'm from New York City and I have been to Chicago numerous times and both have amazing pizza. You can find authentic style Italian pizza in Little Italy in NYC. Pizza quattro formaggi is so good and I'd stab someone in the neck for a cannoli from an Italian bakery right about now. Have you ever had white pizza Sydal?
White pizza (pizza bianca) uses no tomato sauce, often substituting pesto or dairy products such as sour cream. Most commonly, especially on the east coast of the United States, the toppings consist only of mozzarella and ricotta cheese drizzled with olive oil and spices like fresh basil and garlic.
That is easily my favorite type of pizza there is. Although I've never seen it with sour cream as a base, it's usually pesto or just olive oil depending on the pizzeria. You can't find that out here on the west coast. There are some types of pizzas that come close but it ain't the same.

Fuck, now I want some pizza lol.

Oh fuck yea...I'd stab somebody in the neck for a Cannoli, too. LMAO! Now Italian Deli's...we do have those out here. There's one in San Jose called La Villa (Famous for their Ravioli), and the Cannoli there is fuckin' great. Then we have spots in North Beach (S.F.)...also got good shit.

As for white pizza, I've had something SIMILAR (as far as toppings go), but it was Focaccia. The farmers market always has fresh focaccia with Pesto, or tomato toppings...or I just get the Asiago and lace it with olive oil, then bake that shit. BOMB! I'd like to try a white pizza though...not sure about the sour cream base, but I'm down for the olive oil or pesto.

My folks went to NY a few years back and told me if I ever get the chance to go...to get on a plane and do it. They had pizza at some small spot in Little Italy...not sure about the name, but they said this particular joint has a cat that just chills in there (I guess it belongs to the owner). Anyway, they said it was the best pizza they've ever had. So when I get a few days to myself, I think I'm gonna hop on a plane and hit up the big apple...

I've been all over the west coast, east coast and midwest (sadly haven't been down south yet) and NYC is like no other man. I might be biased a little bit though because I'm from the Bronx (moved to Seattle when I was 9 and usually go back every couple years). If you get the chance go. I'd say to make it worth it at all you need atleast a week there though. Let me know if you go and I can give you some places you need to see/go that isn't your usual NYC tour type stuff. But even the tour type stuff is worth it out there. I need to go back, it's been like 4 years which is the longesst it's been since I moved here.
