It's all about keeping shape in formation and getting men behind the ball, everyone wants to PRESS all game because they have that habbit from FIFA 11, it's nobodies fault.
But when you PRESS an attacker you are getting pulled out of shape and create space in and behind your formation, so you need to make sure you have cover, otherwise you will be outnumbered in defence. Watching player runs and running with them, cutting off passing lanes and making sure you mark up well are all important in defence.
And custom tactics are a must to counter the usual high pressure, the best set up is a quick short passing game where players support you in attack but also give you width and space to get the ball away.
Then you got custom formations (you can't use them in FUT). Again, important to play the style of football you want.
My standard formation is a modified
4-1-3-2
2 attacking fullbacks - They get forward and support the attack, overlap the wide mids and backtrack in defence to prevent the counter attack.
Stats needed
Primary - Stamina / Speed / Marking / Heading / Jumping
Secondary - Crossing / Passing / Standing Tackle / Agility / Strength
Fullbacks in a cover defence need to have good height (atleast 6 foot) and defensive skills because they will be covering for the CB's by marking a striker in the box, if the CB is being pulled out to help close down. They need decent attacking abilities when they bomb down the field out wide and create an overlap and support the attacking overload.
1 anchor defensive mid - Plays in front of the CB's, helps them by closing down space, cutting off lanes and plays simple passes.
Stats needed
Primary - Interceptions / Strength / Stamina / Passing / Standing Tackle
Secondary Long shots / Slide Tackle / Long Passing
The DMC needs to be one of the best players in the team mentally, this helps with him automatically getting in good position to stop through balls and close down those AMC's who dribble alot like Messi. Get stuck in with your DMC and break some fucking legs. Teams who use a DMC in an anchor position generally have the meanest cunt in this position, but with the modern game, the DMC has become more flashy. Both older and modern DMC's with a good shot, make rare late runs from 40 yards out and become a threat from distance, same for those with a good passing game.
2 centre halves - Defensive duties only, stay back at all times except for corners.
Stats needed
Primary - Strength / Jumping / Heading / Acceleration / Marking
Secondary - Agility / Balance / Interceptions
This type of CB's are rare, but with FIFA 12 heavily relying on speed and strength, you need two guys here who can keep up with the best strikers. Good height is also a requirement. I keep mine both with the same limited roles who focus on defence and due to having a DMC I don't need a Sweeper/Stopper combo.
2 wider attacking mids - Help both in attack and defence, but main job is attack.
Stats needed
Primary - Speed / Acceleration / Crossing /Attacking Movement / Passing
Secondary - Shooting / Stamina / Dribbling / Ball Control / Agility
These guys play a wide central position in midfield, get to the byline and pump crosses in, or cut inside by using good dribbling and being able to make sharp turns. Any AM's with these skillsets plus good strength is a must have, they can fight off challenges. Ones with good vision and movement can make runs into channels and become deadly support for your Strikers.
1 central attacking mid - Helps both attack and defence, but main job is attack.
Stats needed
Primary - Passing / Attacking movement / Acceleration / Shooting
Secondary - Dribbling / Ball Control / Agility
The AMC plays in the hole behind your Strikers and needs to be the best passer on your team. That 3 man triangle between your AMC and Strikers, the possibilities are endless, you can make decoy runs to open up holes for example. This guy is the key player in Attack, a world class AMC like Messi plays best in this role. The playmaker of the team, the majority of balls should be going his way so you can lay it off or deliver surgical passes to your Strikers to get them on goal.
2 strikers - Attack and close down defence on the ball.
Stats needed
Primary - Speed / Strength / Shooting / Attacking Movement / Jumping / Heading
Secondary - Stamina / Agility / Balance / Dribbling / Ball Control / Passing
The spearheads of your attack. All these stats help with everything you need, from crosses to smart runs to applying a bit of pressure. You need these guys to be able to hold up the ball when building an attack as well as the ability to cut through defensive lines on a counter attack.

It follows the principles of a balanced play style, 5 in attack, 5 in defence, but gives you option of a 7 man overload by using the attacking fullbacks out wide.
