I really don't think there are any besides SF4 and BlazBlue.
Really PS3 isn't all that great when it comes to Japanese games.
...Now PS2 on the other hand.

Sengoku Basara X (Keep in mind no one plays this game on a competitive level because it has time out infinites but it is still a shitload of fun and has bad ass characters and a sweet soundtrack)
Last Blade Collection. (LB 1 and 2, dated but still awesome!)

some gundam games for ps2/psp are good, maybe dead blue can list the better ones ? lol.
y's series (theres a new one for psp out now in japan), they some of the best hack-slash rpgs.
macross ace and ultimate frontier for psp (uf will be out next week in japan).
i hope someday kojima makes a zone of enders 3, don't yall ? zoe2 was good.

yeah i had to cop a jp xbox 360 once i saw those Cave releases..........I had to smack around PlayAsia because they forgot my Ninja Gaiden with my order..but they fixed it....my favorite place to get imports is wolfgames.com .I want to get jp laptop to play some of the doujin shooters and fighters games.
