i became interested in playing instruments around 7 months ago and i fuck with a guitar and the piano.
I am really drawn to the music theory side of it all also. For some reason i am very interested in understanding harmony. For instance, why 2 notes can sound good and 2 other notes seem to clash?
Most of my research into harmony has been through understanding why the notes in a chord give a certain sound, like the notes of C-D-G of C major triad gives off a happy vibe, and what the relative distances of these notes indicate, compared to the relative distances of a C minor triad for instance.
I suggest if you are also drawn to studying music theory, to have a piano around to help yourself visualize the relationships of the notes better.
An insight that ive read somewhere that is making things useful for me is that music is all about tension and release. If you listen to a chord progression in a song, you will start to realize how while one chord makes things tense, soon enough there will be a releasing chord that makes up for it.

I am still a beginner so i might be able to help you out with some things better than if i was more advanced, but who knows, i also might not be.
