Umami: This is where Bacon really shines. Cured meats are especially high in this taste. Umami represents the taste of the amino acid L-glutamate and 5’-ribonucleotides such as guanosine monophosphate (GMP) and inosine monophosphate (IMP). All in all Bacon has as many as 6 different Umami flavors in it. Also Umami is enhanced by salt and smoking both of which Bacon often has.
