Man I'm looking forward to eating like 1-3lbs of chicken today. That 6lb chicken i bought wasn't fully thawed through so I'm waiting for this morning to roast it. I can't eat 6lbs of chicken in 2-3 days though at a 1500 calorie limit... May have to call my brother over to take some or something

any tips? I was just going to stuff the cavity with a squeezed lemon plus the peel, like 10 garlic cloves, a small sweet onion chopped in half, some thyme, little salt and pep. Then rub evoo under the skin and all over the bird, salt and pep, roast it breast down at 450 for like 30 mins, flip it over and add more fresh thyme, finish it at 375 til it hits 165-170. Let it rest like 20 mins then pick that shit up with two hands and just straight bite into it like a beast
