Hot wings, but it goes into detail.
1/8th cup fresh ground coriander seeds
1/2 teaspoon cumin
1 tablespoon salt
1 tablespoon fresh ground pepper
1/8th cup olive oil
1/2 cup sriracha rooster sauce
3/4 stick of butter
1/4 - 1/2 cup chopped cilantro
1 minced up serano pepper or jalepeno
juice of 1 lime, finely grated lime zest
4 cloves of garlic finely minced
mix 1 - 3 lbs of wings with coriander, cumin, salt pepper and olive oil. let sit in fridge for a couple hours.
roast in oven on 375 for about 30 minutes until the wings are just about done. then deep fry a few at a time until they are golden crispy and add the sauce on them
for the sauce get a small sauce pan and add a tablespoon or so of extra virgin olive oil, add a little onion and the minced garlic and serrano pepper and sizzle it up for a couple of minutes to get the flavors going strong into the oil. i sometimes add a half teaspoon of red thai curry sauce and get all the flavors into the oil on low for about five minutes. then add your butter and start to melt it down. then add your sriracha rooster sauce and cook it on low so it kind of reduces but be careful not to burn it.
when the wings are almost done being fried then add all the juice of one lime or more and the fineyl grated lime zest, and te chopped up cilantro. the stems add good flavor. the key to all of the ingredients in th sauce is for them to be finely finely minced so they kind of zing on your tongue.the greatest wings youll ever eat
