im not sure what you are asking. are you asking if they play the guitars and if so from a real guitar or synth? or are you asking if they are samples?

with my guitars its either shad or myself playing (most of the time its shad) or the guitars are samples and chopped up (you cant tell).

we "mic" the guitars AND we record the guitars D.I.
after that we mesh the two together. sometimes we may even shift the pitch on one or throw one of them out of phase on PURPOSE.

pianos DONT make guitar sounds. you can TWEEK a piano on a synth/workstation and make it sound like a guitar or something but real pianos dont make guitar sounds. guitars do.

My Yamaha Motif has some pretty convincing guitar sounds and Roland has some pretty good guitars...You should also check out the guitar sounds on the new Yamaha Tyro keyboard...I was pretty damn impressed with the mega voice demos at http://www.yamaha.com/menuitems/audioclip/dmi/TYROS/TYROS.htm
