whos here cooked carnitas

ive only cooked them once and that was at culinary school...i really dont remember...so could someone enlightin me...

i got 4 pounds of pork
about 2 pounds of lard


so i was going to bring the lard to a simmer throw some garlic cloves and oranges in there to keep them from burning then cook the pork for about a hour in a half on slow simmer then throw some ancho chili powder in there to....anyone else know of anything else

UM..SORRY,..BUT A REAL TRU MEXICAN WHO COOKS CARNITAS IN THE POT KNOWS THAT YOU USE COCA COLA(SODA, NOT THE NOSE CANDY,U IDIOT,LOL)AND LET IT SIMMER IN IT,..IT GIVE THE BALLS OR CHUNKS OF CARNITAS A NICE BROWN COATING AND THEN GIVE IT LIKE A SWEET BOARDER TASTE TO IT AT THE SAME TIME!..THAS WHY THE CARNITAS AT THE MEXICANS STORE ALL GOT LIKE A DARK BROWN COATING!....BUT U ADD IT TOWARDS THE END WHEN THEYRE ALMOST DONE SO U WONT BURN THE SODA TO MUCH!...POPS MAKES EM ALL THE TIME..ITS ALL ABOUT TIMING!.....GOOD LUCK!

damn i wish i had a camera it came out bomb....

i simmered the lard,added garlic cloves,oranges, actually belive it or not limes will burn it faster because of the acid but u can still use thoughs.

i seasoned the meat with garlic powder,onion powder,ancho chili powder,salt,pepper.put some seeds from serranos in the oil..threw about a liter of soda in and let them cook for 2 hours...they fell apart and i actually made carnitas hamburgers.....damn.....there bomb...

Get a Pork loin put it fat side up in a roastin pan rub with genorous amount of salt, pepper, garlic powder and oregeno place like 1/4 or 1/2 cup o water in the bottom of the pan, cover with foil and bake at 400 for 1hour 25 min or until loin looks carmelized and water is gone. Cool, then shred leave in roastin pan and scrap up bottom bits on pan then place back in oven till desired crispness is achieved. Then check seasonings and add more if needed

yea ive ate them that way to..almost like chicaronnies to me however the fuck u spell them......but yea the shit on the bottom pan is the best
