Using the MPC or any midi device as an example. After you create/sequence something with samples you have loaded into the MPC. Can you record the audio to your PC into a program like Cubase on Track 1 and use the pads in realtime... to control VST instruments on Track 2 without triggering the samples from the device that are sent to the audio track?

not sure I understand you completely, but I can control both vst's and keyboards that are hooked up and samples loaded on my MPC4000, from the MPC itself.
Here's how mine is setup,
My MPC sounds are on OUT : PART 1 though 10, basically all drum samples
FANTOM X on OUT: A channels 1-16
MOTIF XS on OUT : B ch1-16
TRITON RACK on OUT:C ch1-16
VST'S on OUT D (goes to the digi 002)- ch1-16, but I use CH.3 for my V-SYNTH XT on out D also

I can use all of these together , so I get the best of both worlds.
But you can definitely be tracking out something on track 1 from a keyboard, and have your vst's on track 2 and play while you track in.
