Couple of questions.

I am interested in learning Jiu-Jitsu but I'm not sure how to go about determining which place is best to practice. Does anyone have any advice on how I can find a good school? There is a Gracie Academy here in Modesto under Charles Gracie (here). That is pretty much the only thing I have to go on as of right now. Other than that I've just been asking around but everyone has their own opinion.

Also, I broke my back a while ago and my ability to stretch has been limited, ie. where I once was able to touch the ground from a standing point, I can now get about a foot away. The doctor has cleared me to do whatever I want and says that my back is not more prone to breaking than it was at any point. How badly do you think this will hinder my development?

I know there are only a few people who train/practice in this forum but there are quite a few of you who pay close attention to MMA/Jiu-Jitsu so your advice is welcome too.

Nick Diaz runs a school in Lodi. Basically anything Cesar Gracie around there is the way to go.

Can't say much about your back but my old bjj coach had a bad back from an injury and there were a few select things he couldn't do.
